Creamy Sweet Potato & Asparagus Soup- Slow cooker

Creamy Sweet Potato & Asparagus Soup- Slow cooker
by Jennifer Gresham

I used two of my favorite kitchen tools to make this soup- My slow cooker/crockpot and blender wand.  However, you do not have to use a slow cooker.  This soup can be easily made on the stove top or even with a pressure cooker. Also it does not have to be creamy. I used my blender wand instead of my beloved blender because of the quantity of soup and to save time. This can be done in a Vitamix.

Feeds: 8-10 people
Slow Cooker on Low for 8hrs or high for 6hrs

2 Large Sweet Potatoes
1 Bunch Asparagus
1 medium to large yellow or Spanish onion
4-5 Garlic cloves
1 TBS non MSG or chemical Chicken Broth Concentrate
6-8 C water
1 can Coconut Creme (if you do not have the creme- use coconut milk and reduce water by 1-2 cups)
2 TBS Butter or Olive Oil
1 tsp or to taste Curry powder
Salt and Pepper to taste

Clean Asparagus and drain. Peel and Chop Sweet potatoes and onion. Peel and dice or press the garlic. Cut dead ends off Asparagus and chop. Place all ingredients into slow cooker. Mix and Add Chicken Broth. Add Curry Powder, 2 Tbs butter and water. Let cook. 30- 1 hour before serving add Coconut Creme or Milk. Stir and then with Wand Blender in Crock (kept at bottom) blend until creamy and all large pieces are blended.
Serve hot and enjoy!

My entire family enjoyed this. Even my 3 yr old who just had to get over the green color, of which we told him was cool. 🙂 It helped that green is his favorite color at the moment.

Slow Cooker Brown Rice

Slow Cooker Brown Rice- Simple with endless possibilities!

This is so easy.

I love this because it is a time saving classic!

You can used cooked rice for any meal!  Breakfast * Lunch * Dinner

Rice for Breakfast????

Yep- but first lets look at this easy and simple base recipe!

Slow Cooker Brown Rice

Serves 8

Prep time: 5min

Cook Time: 3 hours on High / 5 hours on Low

  • 5 C water
  • 2 C Organic Brown Rice
  • 2 Tbs Organic Coconut Oil/ Butter
  • 1-2 tsp salt (optional)

  • If your slow cooker boils then I would use the butter to line crock. (finding a slow cooker that cooks without boiling food is important for good tasting food that has it nutrients still in it)
  • Add water and clean organic brown rice to crock.  Stir in Salt.  add butter cubes to top.
  • Place Lid on and turn to desired temp.
  • If this is the first time. I suggest checking the rice periodically. As each slow cooker is different. Do not open lid if it can be helped.  This slows down cooking time and loses the valuable moisture. Once you’ve made this- note the time it took and you’ll know for future rice recipes.
  • Enjoy

Meat Loaf with Sweet Potatoes

By, Jennifer Gresham

This recipe is easy and yummy! One of my daughters favorites.

The meat and sweet potatoes flavor each other beautifully!  The sweet potatoes are savory with a mild natural sweetness.  The Meat Loaf takes on some of the sweetness which mixes well with the savory and saltiness of the meat.

Serving Size: 8-10

Prep Time: 20min

  • 3 to 4 medium to large organic raw sweet potatoes
  • 2lbs of ground Beef
  • 1/2 lb Nitrate free, MSG free Italian Sausage
  • 1 Large Onion Diced
  • 2 Eggs
  • several Dashes Worcester Sauce
  • 2 Tbs Fresh Minced Garlic
  • 1/4 Cup Black Strap Molasses
  • 1 Cup bread Crumbs (I use my bread in the Vitamix)
  • 1 tsp mustard
  • 1 Cup Ketchup(optional) I use my Fermented Ketchup
    • 1/2 Cup Ketchup o top if desired

  • Peel and cut Sweet Potatoes
  • Layer Bottom of slow cooker with the Sweet Potatoes
  • In a large bowl add all ingredients except sweet potatoes and optional 1/2 c ketchup on top.  I like to mix mine by hand.  But I make sure I remove rings and have everything in the bowl before I mix with hands so I do not have to take them out until done mixing.
  • Form Meat into a loaf shape and place on top of Sweet Potatoes
  • If desired cover with Ketchup.  Place Lid on Slow Cookers.
  • Cook on High for 5 -6 hrs, Low 7-8 hrs
  • 30 min before serving.  Turn Slow Cooker Off and Make Broccoli

We all loved, loved, loved it.  I loved the mix of savory and sweet flavors from the sweet potato, nutmeg and cinnamon.

Slow Cooker Meat Loaf and Potato Meal

Slow Cooker Meatloaf and Potatoes

Entire Meal Done!

Did you know you could make Meat Loaf in a slow cooker?

There isn’t much you can’t make in a slow cooker.  It is every busy persons friend.  As you master using it your friendship grows and for has even become a type of love affair !

I used this recipe as my base recipe.

Here is what I did:

Jennifer’s Slow Cooker Meat Loaf and Mashed Potatoes in 1

This could be easier or more yummy!

I made this for my family of 8. So adjust the according to your needs.

8 potatoes, peeled and cut in 1/4
2 pounds ground elk (beef)
1/2 pound msg free natural sausage
1 large onion, finely chopped
1/2 cup ketchup
1 cup bbq sauce
2-3 pieces whole wheat seeded bread made into cruces in processor
2 eggs
3-4 dashes worchester sauce
2 teaspoons celery salt
1 teaspoon savory (maybe a little more)
1 Tablespoon prepared yellow mustard
4 Tablespoons organic butter
1 cup goat milk (unsweetened almond milk or cow milk)

*Layer cut potatoes on the bottom of the crock. Cut butter into cubes and place around in cut potatoes. Pour milk in crock.  Potatoes should cover the bottom of the crock completely.

*In a large bowl mix meats and all remaining ingredients. Mix really well. I suggest throwing all ingredients into a large bowl and then mix it with hands.  Once your hands are in the raw meat mixture, you won’t want to take them out wash and then add ingredients.

* Shape meet into a loaf shape.  Set on top of the potatoes.  Finalize the meat loaf shape once in crock.  Do not press down into the potatoes.

*Cook on low for about 7-8 hours or high for 4-5 hours. So if you do not remember to start your crock prep before lunch that’s okay- there is still plenty of time.

**Once cooked and finalizing preparation for dinner I made mixed green vegetables.  Then I took the meatloaf out of the Crock and placed nicely on a plater using 2 spatula’s.  Now comes the yummy mashed potatoes.

I added to the potatoes and juice in the crock:

2 cups sour cream
more milk
celtic sea salt to taste
1 stick of organic butter

Using a Hand Blender mixing all ingredients until you have a mashed potato insistency you like.  I like mine a little lumpy.  My entire family raved about these mashed potatoes.  They very much liked the meat loaf also.  I asked where there was room for improvement.  I felt it need a little more salt but was disagreed with.  However 1/2 of the family like speeding my homemade lacto fermented ketchup on top of their piece of meatloaf.  So have fun and make it your own.

Let me know what you do to your meat loaf? Share your ideas and flavors!
