Roasted Brussel Sprouts with Bacon & Almonds

Roasted Brussel Sprouts with Crispy Bacon and Toasted Almonds by Jennifer Gresham

This is a delicious and satisfying dish. That is easy to make.

Ingredients
2 lbs Raw and Cleaned Brussel Sprouts
1/2 lb uncooked bacon
1/2 cup or hand full sliced raw almonds
Organic unrefined olive oil
Pinch or two Red chili pepper flakes
Garlic powder

Directions
Clean and cut Brussel sprouts in half from top(crown) to stem
Spray pan with Olive Oil to lightly coat.
Place Sprout evenly across pan
Place in oven and roast on bake at 400 for 10 min rotating sprouts at least once while baking.
Broil on Low for another 10 min rotating with spoon or spatula more often.
While Sprouts are cooking cut up bacon. Cook in pan with garlic on stove top until 3/4 of the way cooked. Add almond slices, and chili flakes. Cook on medium heat until bacon is crispy and almonds toasted.
Remove Sprouts from oven when cooked. Place sprouts in bowl. Pour bacon & almonds over sprouts. Toss and serve warm.

So so so good.

Shakeology Holiday Recipes

I tried the Egg Nog Shakeology Recipe- well the Jennifer way… hehe

It’s well known I do not follow recipes exactly. I love to change it or “make it better”

So here is, Jennifer’s Shakeology Egg Nog

Recipe
1 Scoop Vanilla Shakeology
1 Tbs Rum
1 dash AllSpice
3-4 dashes cinnamon
8oz unsweetened Almond Milk
To make it creamier I use 1 of the following:
1-2 raw egg (from my own chickens so they’re fresh and safe)
1 banana
1/2 cup cooked oatmeal
* my favorite are the egg or oatmeal. But I like the banana but it adds a Smidge of banana flavor.

1. Mix all the above ingredients in a blender
2. If frosty consistency is desired add 1 cup ice when blending. Otherwise pour over a few cubes of ice. Enjoy.

Healthy Frito Pie

We’ll who doesn’t like Frito Pie?  I do but those Fritos Chips are not worth it to me.  I love salty don’t get me wrong but if I’m going to spoil myself it would be with Chocolate or something like well…. dark chocolate

I digress….

This Recipe Is – Easy, Yummy and Healthier than the Sodium and Fat Loaded Stuff!

Roasted Cauliflower could not be easier and is super delicious!  I sprinkle mine with Garlic Powder.

Ground Turkey Simmered in some spices with Olive Oil.  Then once fully cooked add Canned Chili with Beans

I like to take my frozen Broccoli and place it right into the a pan on Medium.  I sprinkle with Garlic Powder and add a little butter or coconut oil.  I like my broccoli still slightly crisp.

Recipe:

Ingredients

  • 2 Lbs of Raw Organic Cauliflower
  • 1- 1/12 lb Ground Turkey ( check the sodium, you do not want a high sodium turkey.  Something under 90 mg)
  • 1 Family size Can Chili Beans with Beans
  • 2 lbs Frozen Organic Broccoli
  • Cold Pressed Organic Olive Oil
  • 1 Tbs Butter or Organic Coconut Oil
  • Garlic Powder
  • 1 tsp Chili Powder
  • 1/2 tsp Black Pepper

 

1. I sliced my Cauliflower  to be thin for roasting.  The thinner the more crispy.  I’d say I did mine medium.  I sprayed the pan with my Misto of olive oil.  Sprinkled Cauliflower lightly with garlic powder.  Placed in oven on top rack- used Broiler.  Using a Spatula I turned it every so often.

2. While Cauliflower was Roasting- I cooked my Ground Turkey in Pan with about 1 Tbs of Olive Oil.  While cooking I added the chili powder, some garlic powder and black pepper.  When completely cooked I added the can of Chili and beans and simmered.

3. While cooking the ground Turkey I warmed my pan for the broccoli and aded the butter or coconut oil to melt.  Then I poured my Frozen Broccoli into the pan and stirred from the bottom up periodically between checking cauliflower and ground turkey.

4. When Cauliflower was cooked to my liking.  I pulled it out and served with the chili and broccoli.  Enjoy!

Time with your kids is short!

I try to remember this.
Some days all I want is to get behind a closed door and have some silence for 5 minutes.

When I was a younger mother of only 3 I struggled with being content a lot more. I felt my being home deep in unnoticed work was near imprisonment. It was never done, didn’t last and very rarely noticed by anyone.

I really struggled. I was unhappy and feeding my unhappiness was my focusing in all the wrong places. I knew it but just couldn’t get my emotions and thoughts under control.  It just all felt so mundane and never ending.

I was really struggling.  I knew what I was going was important and what I was suppose to do in my heart of hearts.  I went to God and prayed.  He helped me yet I continued to struggle not because going to God was not sufficient – NO it was the opposite. I just could not fully let go……  I continue to run to God and in His love and Patients He continued to always be there, listen and feed my soul and heart.  One day I was in a Christian books store.  I wanted something to read and but we all know not everything on a Christian Book store shelf is worth reading or God based.  Just like not everything in an Organic Healthy Food store is not good for you.  So I said a quick pray and he led me to a very tiny little book:

I love this article.

This is great information for anyone thinking about getting fit.  An excellent reminder for those who have started the journey.

my goal is to help others.  To motivate, encourage and push them.

I have been there-

I have been obese.

I have felt hopeless.

That things where too hard

I was too tired

Too busy

Didn’t know enough

ect…… the feelings, emotions and excuses could fill pages!

 

I have seen many start and when things start to get hard and uncomfortable- (and I promise they will) give up.  Being sore is uncomfortable. The mind tells us we can’t, aren’t worth it, taking time away from more important things and more.  Old injuries flare up, new ones are discovered.  But the things is……. Changing something- means just that.  Things aren’t changed with out taring down, reshaping, rebuilding and modification.  That is UNCOMFORTABLE!

It saddens me when I see someone give up because that means so many things:

It is to the point- yet informative!
